Raw and Healthy Caramel Slice

The perfect little treat!

This caramel slice takes no baking, and can be be whipped up with ingredients that can be found in most home kitchens.

Ingredients

Base

  • 3/4 cup rolled oats 

  • 3/4 cup desiccated coconut

  • 1/4 tsp salt

  • 6 tsp maple syrup/rice malt syrup

  • 4 tbsp melted coconut oil

  • 1 tbsp peanut butter

Caramel

  • 1/2 cup peanut butter 

  • 5x dates soaked in 1/4 cup of boiling water

  • 4 tsp maple syrup

  • 8 tsp melted coconut oil

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

Chocolate topping

  • 100g dark chocolate (I use 90%)

  • 8 tsp coconut oil

  • Small pinch of salt

  • 1 tbsp maple syrup

Method

  1. Line a container with baking paper, this makes it easier to take out of the container and cut into slices at the end.  

  2. Blitz the oats and coconut in a food processor or blender until fine. 

  3. Add the coconut oil, maple syrup, salt, and 1 tbsp of peanut butter. Mix well until a crumbly consistency that will hold when pressed together (add more coconut oil or peanut butter if needed). 

  4. Press the mixture into the container and set aside in the freezer.

  5. Mix the middle caramel ingredients in the food processor/blender until smooth. Note: Sometimes I add hot water to the peanut butter jar, and shake it well. It will change the colour of the peanut butter to a lighter colour and the texture will be more whipped. You may want to add more peanut butter or dates, depending on how you like the consistency. 

  6. Pour the caramel over the base and return to the freezer. Note: Your base needs to be fairly cold for the caramel to be able to be spread on the base without mixing into it. 

  7. Melt the chocolate and coconut oil in a pot - a double boiler works well. Stir until well combined, add in the salt and maple syrup and allow to cool slightly. 

  8. Pour over the middle layer, then place in the fridge for at least 1 hour to set.

  9. Once firm, cut into pieces with a sharp knife.
